Born in Tsukiji and now a 20-year-old institution of authentic Edomae-style sushi, the founder of the renowned “Tsukiji Aozora Sandaime” has spent a decade developing a groundbreaking new concept: a world-first departure from the traditional sushi model of hand-pressed fish over rice. Instead, he introduces an entirely new approach－grilled fish prepared teppan-style－creating a bold new genre: “Yakiniku without grilled.”
